We distill our gins in two copper pot stills – modern versions of the Caterhead still – using a one-shot process.

The equipment was manufactured by Karl (Germany) and it took five strong guys to assemble the stills and column behind the bomb-proof glass. If you’d like to find out more, why not book one of our gin experiences.

London dry and Sloe

Our first gin was City of London Dry gin (2012) followed by City of London Sloe gin (2013) – both award-winning.  We’ve changed the bottle now, but here is how our London Dry Gin used to look.

Our Square Mile gin (2014) was developed to celebrate our location in the heart of the City.  The bottle, sourced from Italy, and the map design was very striking  – it got us thinking about designing our own branded bottle.

Our latest gin, Christopher Wren – is very exciting – developed for us by expert Master Distiller Tom Nichol. Tom is a legend in the gin world, as he was formerly the Master Distiller of Tanquery. We’re very much enjoying the collaboration.
